INGREDIENTS
• 4 Cups Japanese Rice (or California Rice/Sushi Rice)
• 3 inch squares of Dashi Konbu (Dried Seaweed) – optional
• 6-8 tablespoons Rice vinegar
• 4-5 tablespoons Sugar
• 2 teaspoons Salt
• 1/4 cup Japanese Dashi Soup – optional
DIRECTIONS
1. Wash the rice well
2. Put the Dashi Konbu on Rice and cook in a Rice cooker (Better to cook the rice a little dryer than usual)
3. Wait 15-20 minutes after the rice is finished cooking before opening the rice cooker
4. While the rice is cooking, make the Sushi vinegar
5. to make the Sushi vinegar, mix the Rice vinegar, Sugar, Salt and Japanese Dashi soup in a small pot and heat until the sugar is melted
6. In a large plate or large bowl, put the cooked rice and add Sushi vinegar and mix well
7. When mixing the rice and sushi vinegar, use a fan to cool down the rice until rice becomes room temperature.
Ready to roll Sushi!
